Pit-roasted meat known as “rosvopaisti” is a time-consuming outdoor dish. For some Finns it’s a tradition to cook rosvopaisti as part of Midsummer fest.

Ingredients
- A large roast of meat, pork for this example
- Onion
- Garlic
- Chili

Heat the pit up for several hours

Make sure that the meat is well warmed up beforehand. Brown the surface of the meat, as the meat does not take color in the pit.

Add some onion, chili and garlic to the meat.

Place several layers of moistened baking paper and aluminum foil around the meat. Add another layer of wet newspaper. Finally, place the package in a wire net and tie it.

Put the package in the pit and put the coals and soil on top.

Keep the meat in the pit for 5 ½ hours and dig it up.
